There are probably plenty of options for this sort of thing, the one that is available to me is draw.io (or diagrams.net as I think its now called). It has a simplistic CSV interface that I have been using to import definitions output from our database... it takes a bit of manipulation of the data (for instance, putting the field names and definitions in an HTML table inside the CSV as it cannot handle complex objects). Code a routine to output your definition to CSV, add on a few formatting instructions to get it to draw tables correctly and link tables together. Then import it, and move tables around to get the view you want.
I can go into some more detail if you would like but I'm a bit tied up at the moment.
