Is there any detailed logs we can check when errors occurs ? 
- Connect to U2 server failed. ? 
- Extension not Started 

can we set a 'log level' somewhere ?

You and I had a beta ticket on which we raised an engineering issue on this topic. See my mail communication from the 29th of January. I believe this diagnostic will be available in VS 1.1.2 later this year but I will verify. 

There are some rather hidden logs in the %AppData%\\Code\\logs sub directorues for the language server (named "<numbered>-Rocket MV BASIC Language Server.log" ) but this is only after the connection has been established.
