where I can insert this environment variable 

SORTTYPE
SORTCOMPRESS
SORTSCHEME
SORTSPACE
SORTTEMPSPACE

to improve sort performance in mfe project without es region ?

You would create the entries just as you would create other environment variables.  Desktop -> Computer (context menu) -> Properties -> Advanced system settings -> Environment variables.  From the documentation here:  documentation.microfocus.com/.../index.jsp

it appears that this is done on the test server.  Don't see documentation about entering them on a workstation.
