For UniData the commands to change the byte order between high byte and low byte machines are

convdata - for the data / dictionaries
convidx - for indexes
convcode - for the pcode (i.e compiled programs)

If you need more information on the commands you can get it from the UniData ECL HELP command or the manuals which are available from the rocket documentation site.
