Is there a way to get Unidata to respect a change to VFIELDSIZE without a
restart? I have the setting being exported in a profile.d script and it's
set on interactive logins, but Unidata doesn't seem to want to respect the
change.

There are a couple of knowledge articles that may help here:
How-to-solve-virtual-field-too-big-error-increase-the-stack-size-of-a-virtual-field-via-a-UniData-UniObjects-ODBC-connection-and-make-new-VFIELDSIZE-the-default-size

Please note that for client-server connections that use RPC - e.g. ODBC/JDBC and UniObjects - then the RPC service will require a restart to pick up any change for new connections. Hopefully this helps.
