Is there a best practice around how much ec2 storage an Eon node should have?

It's based on the workload, if most of the queries only hit 20% of the data then your depot can be smaller.

If queries are all over the place, plan for the depot to be as big as you would size a bare metal cluster. This includes the "buddy data" since each node will be subscribed to 2 shards.

For POCs I would recommend sizing the usual way, and then figure out what is the real workload.

It's important to remember that all the data loaded in a transaction needs to fit in the depot.

Is there a minimum size? Or would it just read everything directly from s3 if the ec2 was too small?

Not entirely sure about it, but you can set it to always read from S3 if you want to. Still data used during loads needs to fit in the depot, and you also need space for tmp.

I wouldn't recommend doing it that from the start, and if you want to do it then make sure to run tests.
